The Zamorins Story

Our name is a tribute to one of the greatest dynasties in the history of Southern India, to have ruled nearly 700 years and influenced the cuisine of the land in great measures.

Zamorin is the European version of Samoothiri – a dynasty that ruled over the district of Malabar and flourished during the Age of Exploration hosting “...merchants of all parts...” in the words of globe trotter Ibn Batuta (A.D. 1342–47). Their vision of a progressive and inclusive state laid foundation to one of the greatest trading ports in the ancient world – Port of Calicut. It witnessed great exchanges of cultures, traditions, fashion, ancient crafts et al from the eastern and western nations alike to become one of the crown jewels in international trade. This melange of styles and the indigenous culinary art laid foundation to a very rich culinary history to the present day South Indian cuisine.

It is this rich history realized by the Samoothiri's rule that triggered our imagination to name our venture Zamorins - a place where a goulash of ideas can spring and traditional food can be served reminding us of a golden era.

    The Nameless Dream

    After over two decades in the hospitality industry, a seed was planted — born from a deep love for South Indian cuisine and a yearning to share its richness with the world. It was a dream without a name, but full of purpose: to bring this vibrant, soulful culinary heritage to life on a global stage.

    The Meeting

    On a warm English summer evening, three of us — once colleagues, now friends — found ourselves deep in conversation at a gathering. As laughter gave way to inspiration, we asked the question that changed everything: Why not bring this dream to life together?
  • November 2018

    The Birth of Zamorins

    Months of planning, scouting locations, securing support, and seeking blessings culminated in something special. Our dream found a name — Zamorins. In November 2018, we opened our doors for the very first time, inviting the world to experience our love for food, culture, and hospitality.

    A New Chapter in Huddersfield

    As the journey continued, so did the dream. In 2025, with hearts full of gratitude and ambition, we opened our newest branch in Huddersfield — bringing the taste of Kerala and the warmth of Zamorins to a brand-new community. This milestone marks not just growth, but a deeper commitment to our mission: to celebrate South Indian cuisine with authenticity, joy, and soul.

We are three passionate and highly experienced chefs from Kerala, India — also known as God’s Own Country — bringing over 29 years of collective excellence in the global food and hospitality industry. United by a shared journey that began at the University of Mangalore, our trio has since built a reputation for delivering vibrant, authentic Indian culinary experiences. Together, we continue to lead Zamorins with a deep commitment to innovation, quality, and warm hospitality.

With nearly three decades in the hospitality industry, Nebu has transitioned from a skilled chef to a highly respected leader overseeing day-to-day operations at Zamorins Whitley Bay. His culinary foundation and people-first approach make him the cornerstone of the Zamorins experience. Outside work, Nebu enjoys long drives with his family, sharing life lessons and culinary skills with his two now-grown sons, and connecting with guests and team members alike.

Biju Varghese

Biju is the heart of Zamorins’ kitchen in Whitley Bay, with over 29 years of culinary expertise and experiences from some of the biggest and famed kitchens. Known for his commitment to authenticity and consistency, he takes pride in every dish that leaves his kitchen. Biju is a quiet perfectionist who finds joy in classic Indian cinema and the pages of a good book when he’s not at the stove.

With a warm smile and a keen sense for flavor, Jaggu ensures every beverage and pairing at Zamorins Whitley Bay meets the highest standards. His 29+ years of industry experience reflect in his curated drink menus and innovative pairings. When he’s not at work, he’s either crafting a new cocktail or discovering the perfect drink for any occasion.

Vinod Mathew

Vinod brings over 20 years of operational excellence to Zamorins Huddersfield. With a Master’s degree in Hospitality Management from Switzerland, he combines strategic insight with hands-on leadership. His global outlook and dedication to service quality have been instrumental in establishing the Huddersfield chapter as a local favorite.

Mattin John Pappady

Mattin John Pappady

With more than 20 years of mastery in South Indian cuisine, Chef Mattin has built his reputation in celebrated kitchens across India and the UK. He began his culinary journey at the prestigious Taj Malabar and CGH Earth Group in Kerala before moving on to senior roles in some of the UK’s most respected hospitality establishments. Now serving as Head Chef in Huddersfield, he is recognised not only for his culinary expertise but also for his baking prowess and the warmth he brings to every table - whether through his cherished annual Christmas cake tradition or his passion for music as an active member of the church choir.
