Our name is a tribute to one of the greatest dynasties in the history of Southern India, to have ruled nearly 700 years and influenced the cuisine of the land in great measures.
Zamorin is the European version of Samoothiri – a dynasty that ruled over the district of Malabar and flourished during the Age of Exploration hosting “...merchants of all parts...” in the words of globe trotter Ibn Batuta (A.D. 1342–47). Their vision of a progressive and inclusive state laid foundation to one of the greatest trading ports in the ancient world – Port of Calicut. It witnessed great exchanges of cultures, traditions, fashion, ancient crafts et al from the eastern and western nations alike to become one of the crown jewels in international trade. This melange of styles and the indigenous culinary art laid foundation to a very rich culinary history to the present day South Indian cuisine.
It is this rich history realized by the Samoothiri's rule that triggered our imagination to name our venture Zamorins - a place where a goulash of ideas can spring and traditional food can be served reminding us of a golden era.
We are 3 qualified and experienced chefs from Kerala aka the famed God's Own Country with 22 years of track record in contributing to food industry across the world. Graduated together from the University of Mangalore, India the trio are acclaimed for their awe-inspiring recipes of Indian taste.
A seasoned chef by trade Nebu has over 22 years experience in the hospitality industry with reputable names. While not indulging in his biggest passion you can find him making new friends, taking a long drive with his lovely family or teaching his 2 brilliant sons a few tricks of the trade.
Biju, a chef by trade with over 22 years of experience working with reputable names in the hospitality industry is happiest in the kitchen. When not in his favourite place you could find him enjoying a good book or some good ol' Indian cinema.
Jaggu too holds an impeccable track record of 22+ years in the hospitality industry with reputable names. As a warm and friendly chef he is mostly seen sharing his love for food and cooking to the people around or you would find him on an adventure to fix a new drink or find a new pairing for that great drink he enjoys.
